Carlos Avery Bailey was born on October 6, 1961 as the 2nd oldest son of Dr. Jerry Bailey and Mother Mary Jane Bailey in Jacksonville, Florida, where he was educated by the Duval County School System. He was a faithful and active member of Bailey Temple Church of God in Christ in Crystal River Florida, which was under the direction of his father, Dr. Jerry Bailey. It was at Bailey Temple that he met, and married, his wife Gloria (Jenkins) Bailey on March 28, 1981. To this union were born five children: Carlisha (deceased), Carlette, Shatara, Carlos Jr. (deceased), and Shakera.
Carlos was affectionately known as "Barbeque”. As one of the original Pitmasters he was an integral part of Woody’s Bar-B-Que for 38 years. He was also a longstanding, dedicated member of the Bono’s Bar-B-Que team.
Carlos was a very charismatic person. He loved to laugh and joke. He enjoyed traveling, he liked it best when he was also driving. He never met a stranger and he was always willing to lend a helping hand.
